How to make Black Eyed Peas.

1st: Quick soak. Rinse and sort beans in large pot. For 1 lb. of beans add 6-9 cups of hot water.

2nd: Bring to rapid boil for about 2 and ½ minutes.

3rd: Remove from heat.

4th: Cover and let stand for 1 hour

5th: Drain soak water and rinse beans.

6th: Add 6 cups of hot water to the beans.

7th: Simmer gently with lid tilted until the desired tenderness is reached, about 1 and ½ to 2 hours.
