Step 1.peel, chop, and slice eggplant.
Step 2. Put in bowl and microwave eggplant for 15 minutes.
Step 3. (while micro waving eggplant) chop garlic and onions.
Step 4. Saute onions and garlic in olive oil together.
Step 5. Put tomato paste in with onions and garlic.
Step 6. Add 1 can of water to tomato paste, let simmer while preparing.
Step 7. Add chopped tomatoes to tomato paste (stir and simmer).
Step 8. Slice Zucchini and peppers.
Step 9. Saute peppers (set aside) saute zucchini (set aside), both in olive
oil but separately.
Step 10. Check eggplant , if undercooked add up to 10 minutes.
Step 11. Combine all ingredients.
Step 12. Finished product, add cheese or olives if desired.
