Hvar "Gregada" (serves four)

Prepare one kilogram of good quality fish of various kinds, four potatoes, four onions, one bulb of garlic and a bunch of parsley.

Cut everything in big chunks and put in a large pan in layers. Add salt, pepper, 100 ml olive oil and just enough water to cover the fish.

Simmer until the potatoes are tender.
