Pineapple upside down cake

 

Ingredients:

1/4 cup butter (half a stick)
1 cup dark brown sugar
box of yellow cake mix
8oz can of pineapple
maraschino cherries

Instructions:

In a 10 inch cast iron skillet, melt the butter evenly over a low flame. Then evenly distribute the sugar into the butter.

Remove from heat

Drain the pineapples but keep the juice. Arrange the pineapples and cherries on top of the sugar.

Follow the instructions on the box of cake mix, mixing in 5 tbs. of pineapple juice.

Pour batter over the pineapples and sugar and bake in a 350 degree oven for 25 minutes or until a toothpick comes out clean.

When the cake is done, gently turn the skillet upside down onto a plate so the pineapples are on top.

Serve warm or cold.
