Olives

The olive is a fruit tree that produces fruits in regularly, it makes small fruit with high nutritional value, the olive has a small seed inside and birds pluralize the plant when they eat it. The olive taste is bitter and it has a lot of oil.

Sorts

There are 35 sorts of olives but the more important sorts are these:

1. F.Syrian-Local sort that is good at oil, 40 percent of his cover is oil.
2. F.Manzahilo- a Spanish sort that has up to 81 percent of oil, it's good for pressing olives.
3. F.Svilano-Spanish sort that produce big fruits, it's good for pressing olives.

Olive in the past and today

In the past olives were very important economically property for example in the production of oil.

In modern times it is less important but still used for pressing olives.

Quality

There are differences in quality between the different sorts of olives and the Syrian sort is the best.

Olive oil produce-Traditional and Modern

In Traditional produce, in olive harvest, the workers are shaking the tree until his fruits are fall and pick them up from the floor and take the to the oil press and moke olive oil.

Modern olive oil production is done in factories.

There are many oil producers in Israel, we buy olive oil from a producer in the arab village of Um El Fachem and the producer called the "Modern oil press".
